I normally do this -what I call- casserole with eggplant and zucchini but this time I decided to add some broccoli because I wanted to mix it up a little.
This will serve 3 to 4 portions
- 2 zucchinis
- 1 medium egg plant
- 1 small broccoli
- 3 small fresh mozzarella balls
- Tomato sauce. There are plenty of healthy options to get at the supermarket. I use the Marinara sauce or Traditional sauce.
- Parmesan cheese
I cut up the vegetables into small pieces and mix them all together.
I shred the mozzarella balls and then add the entire bottle of tomato sauce. I mix it until all the vegetables are covered with the sauce and top it with parmesan cheese before putting it into the oven for 30 minutes.
I normally make this at dinner time and is one of hubbys favorites. A great thing about this dish are leftovers! they make a delicious lunch for next day, they are perfect with pita bread or they can be made into bruschettas as well.
