The recipe I'm sharing today was lunch for me yesterday. I was caught up with work when I realized it was late for lunch time -meaning- I was starving!
I looked around and found a little bit of everything: a bunch of broccoli, turkey breast & some green beans.
I came up with the idea to mix everything and make myself a quiche looking meal.
I used:
- 4 egg whites
- 1 cup of steamed broccoli
- 1 cup of steamed green beans
- A bunch of turkey breast
- Salt and pepper
- Feta cheese
In a bowl I added and mixed everything -except the feta cheese-. Then I poured the mix into a pan and let it cooked while covered. The final result is kind of an omelet but thicker. The main ingredients are the veggies not the eggs.
I served it with the feta cheese sprinkled on top.
