Two big things happened this past weekend.
First this:
Then this:
About the run.
It has been my longest in a while and I loved loved loved it. I was afraid it would be hard but it wasn't!
I've been trying to keep it under 5K but on saturday afternoon I needed some long & fast running.
I ran 7K in 44 minutes! I normally run 5K in 45!!!
As for my body the great news is that nothing hurts. I have a minor case of sore quads which I guess it's normal.
About the bagel.
Heinz and I were hungry so I decided to be super nice and let him have some eggplant & zucchini casserole leftovers. One of Heinz favorite meals. I looked around and found there was nothing more than a bunch of sliced mushrooms sitting in the fridge.
I decided to sauté them with some dijon mustard and garlic powder then I would serve them on a toasted bagel. When Heinz saw the mushroom's appearance -of course- he decided to let ME have the leftovers. Not so fast mister. Not so fast.
I told him it would only be fair to share.
I sauteed the mushrooms, toasted a bagel, topped it with Munster cheese, added the mushrooms, snapped a picture and let Heinz have one slice.
He was a happy man.
I love it when yummi recipes come out of -I had nothing left in the fridge- moments. Maybe it is because it forces you to be creative.
How about you? any -I-put-together-what-I-had-and-turn-out-delicious meals? any long run weekend happy moments?
I'd love to hear from you!
