Boy do I have a treat for you!
This was my lunch yesterday and it was heavenly. It was sort of a stir fry and this is what I used:
- 1 medium broccoli
- 2 zucchinis
- A bunch of rice noodles
- Cashews
- Sesame oil
This was the first time I was using sesame oil. After this recipe I will never let my kitchen go without this delicious must-have. If you are willing to give this recipe a try please don't skip the sesame oil as it plays the biggest role in this dish.
I cut the broccoli into bite size little trees and I used a peeler to slice the zucchini. I tossed both vegetables in a pan where I had preheated the sesame oil. I used about 3 to 4 spoons I didn't really measure I just made sure it was enough to cook the amount of vegetables. I added the cashews and some salt.
The rice noodles are the easiest. You boil some water and then let the noodles cook for five minutes. Don't leave the noodles unattended they cook super fast! Once they are soft, drain them and cool them by running them under cold water.
Once I had the vegetables ready and the noodles were done I mixed everything together and added a little bit more of the sesame oil.
I thought it would be enough for two but I have so much left. I think I made enough for four good-size portions.
Since I like vegetables I made sure my plate was filled with more vegetables than noodles. If not I think it would have been too bland since the noodles are pretty tasteless.
